Mushroom Pulled Pork Sandwich Recipe

Ingredients

1 lb. Oyster mushrooms
1-2 T bbq seasoning blend
Olive oil, or your preferred cooking oil
Salt, to taste 
Barbecue sauce of your choice

Directions

Preheat oven to 400 degrees F

  1. Prepare baking sheet with parchment paper or aluminum foil
  2. Shred mushrooms, using your hands or two forks, and put into a bowl
  3. Drizzle oil over the mushrooms and toss to evenly cover
  4. Sprinkle seasoning blend over mushrooms and toss to evenly cover
  5. Spread mushrooms evenly on the baking sheet
  6. Cook for 25-30 minutes, mixing them halfway 
  7. Remove from oven and put mushrooms into a bowl, spoon barbecue sauce over mushrooms, and stir to cover
  8. Spoon sauced mushrooms onto brioche buns
  9. Top with pickled red onions, pickles, or coleslaw and serve
